The Trough caters cocktail-making services for special events

When Paula and Kervin Olmeda married in 2017, they wanted an outdoor wedding to celebrate the natural beauty of Colorado. But they also wanted a drink station. Pinterest showed Paula an option: a mobile bar.

“They had things like that more up north, but it would cost an arm and a leg to have them come down here,” she says. So they built their own from a restored 1960s horse trailer, and after the wedding, they turned it into a side business. The Trough now handles events across town, utilizing Paula’s 13 years in the service industry.

To be honest, we’re pretty sure there’s no legal way for a food truck to serve alcohol. But what the Olmedas actually offer is a mix of consultation, bartending and serving. When booked for events, they’ll partner with clients to build a menu and a shopping list, leaving clients to purchase the liquor and stock the bar themselves. They also have a tap tower for pouring from kegs, and they’ll serve prepared food as well. Paula says their ice cream cookie sandwich bar program did particularly well over the summer.

“People aren’t just renting a bar,” she says. “I think the most important thing we offer is not just the service, but the vibe that comes with it ... It really is the life of the party.”
