There’s a lot to love at Ben Geiger’s food truck, not least of which is the fact that he posts his weekly schedule on Facebook and their website regularly. It’s a shame when a lack of promotion from other entities makes it harder for diners to find good food. While the menu is short, it’s all good. On our visit, they’re out of their signature bison chili. We make do with spinach artichoke dip ($7/full order), creamy and delicious with plentiful, crisp house-made chips, carrots and cucumber rounds.

The same chips accompany tender and meaty bison sliders ($8 for two). We prefer the green chile slider, topped with delicious, spicy Hatch peppers, though the creamy chipotle sauce and gouda pleases as well. There’s a familiar spice profile of cumin and oregano in the Southwestern quinoa spring rolls ($6), fried like egg rolls and full of nutty quinoa. The accompanying dipping sauce features (and balances out) Mae Ploy sweet chili sauce for a pleasant fusion bite.
