Larry and Eva Brassill’s food truck has been kicking around the Springs since August of 2018, bearing some funky-fresh truck art and a selection of ice creams, blended “brain freeze” drinks and, to stay operational during the winter season, a selection of sandwiches. When we link up with this truck, they’re at Dueces Wild Brewery, and our beers want desperately for some grub. While we’re happy to see vegan options featuring Tofurky and vegan cheese, we opt for a buffalo chicken sandwich, served with blue cheese sauce for dipping.

It’s a bare-bones sandwich, tender shredded thigh meat topped with vinegary hot sauce, red onion and a lettuce leaf. When our beer’s gone, we wash the remainder down with a Lightning Brain Freeze. That’s made with the Brassills’ homemade vanilla ice cream, pineapple and lemonade.

The lemonade doesn’t pop in ours; we mostly taste pineapple and vanilla, which is fine. Between big ice chips, we do get chunks of pineapple, so they’re using real fruit. All told, not bad.
