Twelve Thirty One Craft Kitchen adds Tex-Mex to FH Beerworks East

On Thursday, Oct. 18, FH Beerworks East held its massive press preview event, which also marked the opening of stationed food truck Twelve Thirty One Craft Kitchen (2490 Victor Place, facebook.com/twelvethirtyonetacos). It’s owned by couple Rebecca and Tyler Baggett, who describe the taco-centric truck as Tex-Mex with a slight twist.

“Everyone likes tacos and beer,” she says. “My husband’s from Texas, and I’m from Florida, and tacos are just our jam.”

Tyler’s been in the food industry for a little over 10 years, eight of which he’s spent as the general manager of a Black-Eyed Pea location. Rebecca says she’s done a little bit of everything, from waitressing and barista work to nannying and more — whatever sounded exciting, she says. Their truck’s name is a biblical reference, Rebecca says, and a declaration of intent: For them, “love thy neighbor” starts with making delicious food with good ingredients.

“All of our salsas and sauces are completely house-made,” says Rebecca. They also source local as much as possible, using beef from Sangres Best Beef, honey from Black Forest Honey and chicken from Boulder Natural Meats.

“Mostly, we’re trying to use really fresh seasonal items — whatever is local and delicious, we’re gonna throw it on there,” she says. Further, they plan to offer vegetarian, vegan and gluten-free options so everyone has something to eat. They’ll be serving from the FH Beerworks East campus, but they will offer catering in the form of taco bars.

Rebecca says that their mission extends beyond good food, too. In the interest of conservation, they’ll be using 100 percent biodegradable paper goods and pursuing sustainability. Once they’ve gotten established, they also plan to make charitable donations to women’s and homeless shelters.
