Local Kanwal Singh and Denver’s Raymond Sandhu have backgrounds in retail — each is a franchisee for multiple 7-Eleven locations — but they’ve decided to open a restaurant together. It’s called Urban Tandoor, it’s in the old Denny’s near Chapel Hills Mall, and while Singh hoped to open before Christmas, he says it looks more likely that they’ll open in the first several weeks of 2019.

To stand out, he says Urban Tandoor will be offering a high-end experience with an urban visual aesthetic, featuring imported custom furniture and flatware. In the kitchen, they’ll have Baldev Singh, who Kanwal Singh says has 12 years’ experience in Indian restaurants. They hope to bring in another chef who currently lives in India, pending visa paperwork.

The menu’s going to lean heavily on dishes cooked in a tandoor, a cylindrical oven traditionally heated with charcoal or wood. Singh says diners can expect more familiar dishes like tandoori chicken and lamb kebabs, as well as more eclectic Indian fare like tandoori squid and other calamari dishes. They’ve secured a liquor license and will host a full bar, with beer, wine and spirits.
