Veteran Coffee Roasters opens in New South End

On Feb. 3, owners Merri Seymour and Dale Newhart, both veterans, will celebrate the grand opening of their roastery and coffee shop, Veteran Coffee Roasters (1003 S. Tejon St.), having soft-opened on Jan. 26. For Seymour, it’s a surprising step in a seven-year journey that began with an impulse to satisfy her restlessness as a stay-at-home mom.

“I wanted to get out of the house and got a job at a local coffee house,” she says — namely, Custom House Coffee in Middletown, Rhode Island, where she lived. It started as a part-time gig, but she became captivated by the roasting process, the delicate flavors of fresh beans and the massive network of businesses that supplies people with their daily cuppa.

The name’s licensed from Custom House, and they roast according to shared recipes, offering single-origin beans and six blends.

“The R&R roast, for instance, is 50 percent Costa Rican, 50 percent Colombian Supremo,” she says. “It’s a medium roast, and it’s my favorite. It’s going to be our house blend.” Seymour and Newhart also plan on donating a dollar to veteran support organization Vets4Vets-Colorado for every pound of beans they sell.
