Villa Palmer Lake returns to Italian eats

Villa Palmer Lake (75 S. Hwy. 105, Palmer Lake) has been changing this year. In March, the owners announced that the spot would be closing after over five years in business. Soon after, it became The Sundance, a concept that Sundance general manager Adam Guller describes as “trans-Pecos European Southwestern.” Guller says locals kept asking: “Why is it not the Villa?”

After a month and a half in business, The Sundance has closed, was sold and, as of Oct. 18, has reopened as Villa Palmer Lake once more. It’s now owned by Matt Beck, who previously sold kombucha for Beverly Hills, California-based GT’s Living Foods, and head chef Anthony Ramos, who was the executive chef for a previous incarnation of the Villa from 2000 to 2005. Adam Guller stayed on and is now co-manager with Ryan Avila, a former bartender at Littleton’s Angel’s Share Wine Pub.

The Villa is once more an Italian restaurant, offering a mix of modern and classic dishes. Expect handmade noodles and pizza dough, with vegan, vegetarian and gluten-free options available. Price-wise, entrées mostly land in the $16 to $18 range.
