Today marks the beginning of the second week of the National Western Stock Show, one of the most eagerly awaited events among the farmers and ranchers of Colorado's eastern plains, as well as the rest of the country. Rodeos, stock sales and other opportunities for countryfolk to show off their skills bring not only huge crowds and big money but controversy and animal-rights demonstrations. Howard Lyman knows what it's like depending on Nature to make your living. Still, the former cattle rancher rethought his choices and decided to become a vegetarian and join Oprah Winfrey in her court battle with the Texas cattle industry.
