As a kid, I was taught to not take treats out of the back of a van. But most vans don’t have a UNIC twin Rumba espresso machine, a rack of Monin and Torani syrups, a coffee grinder and a cup dispenser. Wheel Coffee isn’t most vans. 

Anna Spriggs has been running this truck since 2017, when she started it in Harlingen, Texas, before moving it to the Springs in 2018. It’s her first foray into the coffee biz; she took a brief class, then learned most of what she knows from the coffee truck’s previous owner. Since, she’s been serving up shots made from local Veterans Coffee Roasters beans. We order a dirty chai and a cold brew coffee. The former rates noteworthy, nicely spiced from Oregon Chai mix and heavy on the coffee notes, though not so heavy that the chai disappears. She stocks a variety of non-dairy milks, too; we try soy milk in ours.

As for that cold brew, it’s smooth and gets the job done.
