On a Tuesday night, Mark Travis’ massive North Academy honky-tonk and dance hall, Whiskey Baron Dance Hall & Saloon, is trying out something new: an 18-plus night, complete with a booze-free bar on one side of a sunken dance floor. The food menu’s a three-sided table topper, mostly small bites and snacks, and there’s no real drink menu so much as cheap beer, well drinks and a few good whiskeys.

The chicken fried steak sliders ($11.99/three) are full-sized food-service patties overhanging tiny slider buns, but they’re hot and crisp under peppery cream gravy, paired with nearly crunchy tater tots. Albuquerque egg rolls ($10.99/three) come packed with carnitas, corn and black beans — spinach, cheese and red pepper don’t really appear, though the avocado ranch adds mild kick. A mac & cheese grilled cheese ($8.99) is cavatappi in cheese sauce on buttered Texas toast, in need of salt and unity. Spice fans will enjoy added Hatch green chilies (99 cents) though.
